Yum Yum Zucchini Bread

My mom gave me this recipe, not sure where it came from, but enjoy!!

Ingredients

Serving Size: 1 Loaf

1 1/2 eggs
1 cups sugar
1/2 cup oil
1 cups grated, unpeeled zucchini
¼  cup crushed pineapple 
1 teaspoon vanilla
1 1/2 cups all purpose flour 
¾  teaspoon nutmeg 
¾  teaspoon cinnamon
¼  teaspoon baking soda
¼  teaspoon baking powder 
½  teaspoon salt
1/4 cup chopped nuts

Directions


Preheat oven to 350 degrees F.

Put zucchini in strainer and press or squeeze with hands to get excess liquid out.

In a large bowl, beat eggs and sugar until light and frothy. Stir in oil, zucchini, pineapple and vanilla. In a separate bowl, combine flour, nutmeg, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into greased and floured pans. 

Bake for 60 minutes or until done.
