Red Velvet Cake

Ingredients CAKE 2 c. plain flour 1 tsp. of baking powder 1 tsp. baking soda 1 tsp. salt 2 tbsps. unsweetened cocoa powder 2 c. sugar 1 c. vegetable oil 2 eggs  1 c. buttermilk 2 tsps. vanilla extract 1-2 oz. red food coloring (I used 2 1/4 tsp. of gel food coloring) 1 tsp. distilled white vinegar 1/2 c. of prepared plain hot coffee (don't skip this ingredient) Parchment Paper CHOCOLATE GANACHE & FROSTING  1/2 c. double cream (US substitute is heavy cream) 50 gms. or 1/4 c. of plain chocolate chips or chopped plain chocolate 300 mls. or 1 1/4 c. heavy whipping cream or double cream ( US substitute is heavy cream) 1 1/2 c. cream cheese 1 c. confectioners sugar Directions Pre-heat the oven to 325° F/ 170° C. Ingredients CHICKEN & SEASONING  5lbs chicken wings, rinsed well and patted dry Salt and black pepper Garlic powder to taste Onion powder to taste 2 tsp ground turmeric 3 Tbsp Olive oil 2 tsp good dried oregano Parchment Paper HOT WING SAUCE   1/4 cup ketchup 1/4 cup BBQ Sauce 1/4 cup Frank's Red Hot Sauce Grace Scotch Bonnet Sauce to taste 1 stick of butter 2 tablespoons minced garlic (more or less for your taste) 1 1/2 tablespoon Worcestershire sauce 1 tablespoon apple cider vinegar FOR BLUE CHEESE DIP 1 1/2 cups bottled ranch dressing (a good thick one) 1/2 cup crumbled blue cheese (Danish, Gorgonzola, or Roquefort, etc) plus 1 tablespoon to garnish FOR CELERY 8 medium celery ribs, , cut into slim sticks 4 to 5 inches long Directions Preheat oven to 425°F. Yum Yum Zucchini Bread

My mom gave me this recipe, not sure where it came from, but enjoy!! Ingredients Serving Size: 1 Loaf 1 1/2 eggs 1 cups sugar 1/2 cup oil 1 cups grated, unpeeled zucchini ¼  cup crushed pineapple  1 teaspoon vanilla 1 1/2 cups all purpose flour  ¾  teaspoon nutmeg  ¾  teaspoon cinnamon ¼  teaspoon baking soda ¼  teaspoon baking powder  ½  teaspoon salt 1/4 cup chopped nuts Directions Preheat oven to 350 degrees F. Put zucchini in strainer and press or squeeze with hands to get excess liquid out. In a large bowl, beat eggs and sugar until light and frothy. Stir in oil, zucchini, pineapple and vanilla. In a separate bowl, combine flour, nutmeg, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into greased and floured pans.  Bake for 60 minutes or until done.

Sweet Cherry Pie

Ingredients 1 can cherry pie filling (Syrup washed off) 2 cups frozen bing cherries  1 cup granulated sugar 4 tablespoons cornstarch Your favorite pie crust or pie dough recipe for 2 crust pie 1 1/2 tablespoons butter, to dot 1 tablespoon granulated sugar, to sprinkle Directions Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch. Preheat the oven to 375 degrees F. Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch...

Easy Peach Cobbler

Ingredients 1/2 cup unsalted butter, melted 1 cup all-purpose flour 1 cup sugar 3 tsp baking powder Pinch of salt 1 cup milk 4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches) 1 tablespoon fresh lemon juice Several dashes of ground cinnamon or ground nutmeg (optional) Directions Preheat oven to 375 degrees. Pour the melted butter into a 13 by 9 by 2-inch baking dish. In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and the salt and mix well. Stir in the milk, mixing until just combined. Pour this batter over the butter but do not stir them together. In a small saucepan, combine the peaches, lemon juice, and remaining cup of sugar and bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do not stir them together. Sprinkle with cinnamon or nutmeg if desired.   Bake in the preheated oven for 40 to 45 minutes or until the top is golden-brown.
